When we have so many Biblical and extra-Biblical texts proving the existence of Christ, why don’t we see these articles questioning the existence of Homer or even Plato?

That’s an excellent question and the answer is simple.
There is truth and then there is what people want truth to be.
It’s the biggest hypocrisy of all time.
You provide proof whether it be scientific or otherwise about God and Christ or Cain and they ignore it.
Provide proof of something they like using the exact same methods and suddenly it becomes valid over the other.
If Cain exists?
Then so does God, there cannot be one without the other.

I also think the demand we look to extra-biblical sources is completely unwarranted. The later decision to make a text a part of the bible or not should not itself make it more or less a legitimate historical source. (at least not for the non-christian) Sure some of the underlying reasons why it is in the bible or not can effect the historical weight. But just drawing a line between books in the bible and books outside the bible is arbitrary.
But yes the fact that so many sources over and above those in the bible survive is pretty remarkable.
